Grilled chick’n with Spicy vegetables
Savour the bold flavours of my Chick’n with Spicy Vegetable dish, featuring tender, juicy Chick’n paired with a vibrant medley of vegetables seasoned with a kick of spice. This dish delivers a satisfying balance of heat and freshness, perfect for a flavorful meal.
You will need:
• 4oz Chick’n Breast
• ½ Yellow Zucchini, chopped
• ½ cup Broccoli, roughly chopped
• ½ cup Cauliflower, roughly chopped
• 2 cups of Baby Spinach
• 1 tsp Paprika
• 1 tsp Salt
• 1 tsp Pepper
• 1 tbsp Chilli Pepper Flakes
Method:
Sprinkle the Paprika, and some Salt and Pepper onto the breast on each side.
Grill for 3-4 minutes per side on medium-high heat (or until fully cooked through).
Prep all your Veggies by chopping them into bite sized pieces.
In a medium non-stick pan over medium heat, combine all Veggies except the Spinach.
Let them cook for 2 minutes, making sure to stir occasionally.
Add 1oz water and place a lid on the pan to steam the Veggies.
Allow them to steam for about 30 seconds.
Remove the lid and add your Spinach and chilli flakes.
Cook for another 2 minutes while stirring.
Plate the grilled Chick’n and Veggies side by side and enjoy!
