No bake Strawberry Cheesecake
Treat yourself to my No-Bake Strawberry Cheesecake, a creamy and indulgent Dessert featuring a Luscious Cheesecake filling topped with fresh, juicy Strawberries, all resting on a buttery Digestive crust.
It's the perfect sweet treat—delicious, refreshing, and effortlessly easy to make!
You will need:
250g Digestive Biscuits
100g Butter (melted)
1 Vanilla Pod
600g Full Fat Plant Based Soft Cheese
100g of Icing Sugar
284ml pot of Plant based Double Cream
For the topping
400g punnet of Strawberries (halved)
25g Icing Sugar
Method:
To make the base, Butter and line a 23cm Loose-Bottomed Tin with baking parchment.
Put the Digestive Biscuits in a plastic food bag and crush them to crumbs using a Polling pin.
Transfer the Crumbs to a bowl, then pour over the Melted Butter.
Mix thoroughly until the Crumbs are completely coated.
Tip them into the prepared tin and press firmly down into the base to create an even layer.
Chill in the Fridge for 1 hr to set firmly.
